Five-course Mediterranean-inspired menu paired with refined Château de Malescasse wines from the Haut-Médoc region of Bordeaux

Bangkok, Thailand – April 29, 2025 – Join VIU for a special evening of gourmet dining and fine wines at the Château de Malescasse Wine Dinner, taking place for one night only on Friday, May 30, 2025. This unique dinner features a curated five-course Mediterranean menu, thoughtfully crafted by Executive Sous Chef Matteo Fontana, designed to harmonize beautifully with wines from the Château de Malescasse vineyard and estate in the renowned Haut-Médoc region, known for its refined, terroir-driven wines and strong commitment to Bordeaux tradition.

Nestled in the heart of Bordeaux’s Haut-Médoc region, Château Malescasse stands as a beacon of winemaking excellence. Since earning its AOC (Appellation d'Origine Contrôlée) status in 1935, this area has been home to many prestigious grands crus classés and crus bourgeois. Known for its sophistication and the unique expression of its fine gravel terroir, the estate continues to produce wines of remarkable quality and distinction, firmly rooted in traditional methods yet always evolving.

Executive Sous Chef Matteo has thoughtfully crafted each dish to perfectly complement the unique character of these wines, sharing his Mediterranean roots and passion. The five-course menu begins with the Cadoret “La Plate du Bélon” Oyster Tempura, enlivened with fresh yuzu gel and tomato salsa, beautifully matched with the Leclerc Briant Champagne Brut NV to enhance its oceanic freshness. Followed by the Tartare di Gambero Rosso, the vibrant flavor of raw Italian red prawn, orange gel, and Oscietra caviar shines alongside the La Closerie de Malescasse 2019 (AOC Haut-Médoc), complementing the delicate seafood. The third course, Raviolone alla Milanese, filled with veal ossobuco and crowned with saffron and truffle carpaccio, is paired with Le Moulin Rose de Malescasse 2020 (AOC Haut-Médoc), offering a delightful balance to the richness of the pasta. For the main course, Chef Matteo presents his traditional Italian dish, Filetto di Agnello Ripieno, a hearty spinach-stuffed lamb loin that finds its perfect partner in Château Malescasse 2020, Cru Bourgeois Exceptionnel, with its beautiful aromas, complexity, balance, and expressive tannins. The meal concludes on a sweet note with Forêt Noire, a classic German dessert featuring chocolate crémeux and Kirsch Chantilly, topped with a sour Amarena cherry in a modern presentation.

The Château de Malescasse Wine Dinner will be happening on Friday, May 30, 2025, at VIU on the 12^th floor of The St. Regis Bangkok, starting from 6:00 PM onwards. The evening features a five-course menu paired with Champagne and handpicked French wines, priced at THB 3,000++ per person. Guests will be warmly welcome by an ambassador from Château de Malescasse, who will share the stories, techniques, and expressions of their wines, offering you a deeper appreciation of this celebrated Bordeaux estate.
