A CULINARY CELEBRATION OF TRADITION AND SEASONAL FLAVORS

Mediterranean-inspired 4-course set menu featuring local ingredients and modern

Bangkok, Thailand – December 24, 2024 – VIU restaurant, located on 12^th floor of The St. Regis Bangkok, is delighted to unveil its latest culinary initiative, the "Mediterranean Quartet," an exclusive dining series. Inspired by the changing seasons in the Mediterranean countries, this series features an exquisite four-course set menu which will be completely changed quarterly as an alternative option for gastronomes who expect special dining experience. The debut of Mediterranean Quartet is available for lunch and dinner from January 1 to March 31, 2025.

"The inspiration stems from a contemporary reimagining of classic recipes, focusing on the freshness of using local ingredients," explains Executive Sous Chef Matteo Fontana. "Highlights include sunchokes and cauliflowers, while the lamb leg, a quintessential element of winter cuisine in many Western countries, is expertly prepared using traditional braising techniques."

The culinary journey through the Mediterranean begins with Amberjack Fish and Avocado Tartare, topped with Oscietra Caviar, followed by Homemade "Plin" Ravioli Filled with Braised New Zealand Lamb Leg in a saffron sauce and crispy leeks. Guests can choose between a main course of Grilled Australian Wagyu Beef Striploin topped with crushed pistachios, served with sunchokes, caramelized onions, and rich beef jus; or Pan-Seared Antarctic Black Cod served with roasted cauliflower, crispy guanciale, black garlic, and a rich paprika beurre blanc. The seasonal set menu concludes with a delightful Valrhona Chocolate Pavlova, served with raspberry sorbet.

Located on the 12^th floor of The St. Regis Bangkok, VIU boasts stunning views over the Royal Bangkok Sports Club and the vibrant city skyline, setting the scene to satisfy gourmands for all occasions, regardless of casual catchups or business discussions. In addition to à la carte menu serving hearty Mediterranean cuisine and its ‘At the Table’ concept served in Signature Sunday Brunch and EPIC dinner, the inaugural Mediterranean Quartet at VIU offers the 4-course set menu, available for lunch from 12:00 PM to 3:30 PM, except Sundays, and dinner from 6:00 PM to 10:00 PM, except Fridays and Saturdays, from January 1 through March 31, 2025, priced at THB 2,500++ per person.
