Bangkok, Thailand – November 26, 2024 – Head Chef Arne Riehn and IGNIV Bangkok team warmly invite guests to explore a newly launched Winter Menu, presenting the joy of family and friend gatherings in the comforting and festive spirit. Served in a sharing feast format, this menu uncovers earthy European winter flavors accentuated by the contrast of refreshing local Thai ingredients which Chef Arne enjoyably handpicked. Experience a harmonious blend of rich and light flavors, available from December 2, 2024, to March 2, 2025.

Inspired by Europe’s winter season, the flavor profile includes the earthiness of root vegetables such as truffle, celeriac, leeks, and beetroot, complemented by the smoky richness of proteins such as smoked sturgeon—a traditional preservation method from colder climates. Locally sourced ingredients also enhance the season's creations with refreshing, tangy and acidic taste of Nan olives, Chiang Mai strawberries and calamansi, as well as the crispness from local lotus stems and watercress.

“This Winter Menu captures the essence of festive gatherings through ingredients that not only cater to the palate but also to the soul. In addition to the taste of European Winter, I have also incorporated distinctive local ingredients, including lotus stems, Thai olives and watercress to add an intriguing element which perfectly reflects the festive spirit and surprise,” said Head Chef Arne Riehn. 

The journey includes 18 handcrafted dishes in a shared dining experience, beginning with snacks like Foie Gras—Hazelnut—Cherry and Lotus Stem—Lemon—Mint. The experience continues with starters such as Kohlrabi—Watercress—Pea and Smoked Sturgeon—Capers—Thai Olive, followed by mains like Wagyu—Celeriac—Truffle and Arctic Char—Carrot—Calamansi. The cozy meal concludes with delightful desserts, including Chocolate—Cascara—Raspberry Vinegar, made with Chef Arne’s most favorite chocolate from Chanthaburi and cascara from northern of Thailand, as well as the creamy Soufflé.

The finale is signaled by an introduction to the IGNIV Candy Store; an invitation to revisit one’s childhood with a visual extravaganza of canelés, madeleines, financiers, caramels, toffees, chocolate dipped nuts, panforte and nougat to be brought home as a delicious memory of their visit.

Chef Caminada’s name is synonymous with haute cuisine, vision, and innovation. Schloss Schauenstein, with 3 Michelin stars, will celebrate its 20-year anniversary in December 2023. The Graubünden native’s ideas are usually well ahead of their time but also reflect the present, and his «IGNIV» restaurants are no exception. Caminada invites guests to embark upon a culinary experience: the sharing of time and fine food. A concept that truly appeals to a modern, cosmopolitan guest and creates a place in which culinary indulgence is celebrated. Rhaeto-Romanic for «nest», his currently three IGNIV restaurants are places for the senses where sharing culinary art, indulgence and time take center stage – a refreshing and young concept with outstanding cuisine focusing on the product. IGNIV celebrates also an attitude to life: experiencing a lasting gourmet adventure with friends and acquaintances, jointly putting together a meal which will ultimately be served in pans and platters as sharing dishes. The omnipresent love for detail leads to a modern but cozy atmosphere. In Switzerland, the renowned Spanish designer Patricia Urquiola was responsible the interior design of all four IGNIV restaurants and created the unique, hedonistic ambiance within their partner hotels.

In addition to the exquisite interior design, the IGNIV logo, designed by graphic designer Remo Caminada, also adds a touch of understated refinement. He used the simplest of design elements to create the logo: an oval and straight lines. At first glance it appears to be merely a muddle of lines and only becomes clear when one looks closely: It symbolizes an egg in a bird’s nest. The gastronomic concept not only pleases its guests: Guide MICHELIN currently awards two IGNIV restaurants in Switzerland – at Grand Resort Bad Ragaz, at Marktgasse Hotel Zürich, both with 2 MICHELIN stars and opening 4th quarter 2024 IGNIV Andermatt.
