Bangkok, Thailand – August 27, 2024 – One-MICHELIN starred IGNIV Bangkok restaurant, located at 1st floor of The St. Regis Bangkok, is set to host a special wine dinner featuring the celebrated Domaine Henri Bourgeois from Sancerre, highlighting over ten generations of winemaking expertise, on Monday, September 16, 2024.

This event at IGNIV Bangkok not only offers a tasting journey through the vineyards of France’s Loire Valley, but also provides the rare opportunity to meet Mr. Jean-Marie Bourgeois, the owner of Henri Bourgeois. Delve into the stories behind their labels and learn how passion and heritage combine to create wines that are cherished around the world. Throughout the dinner, Mr. Bourgeois will enrich the dinner experience, guiding guests through each pairing and shedding light on the sustainable practices and the iconic Kimmeridgian soils that impart depth and complexity to their wines.

Created by IGNIV Bangkok’s newly appointed Head Chef Arne Riehn, each dish has been crafted to complement the unique characteristics of these wines, showcasing the best of local and seasonal ingredients. Begin with delicate snacks designed to whet the palate, featuring Kataifi—Mushroom—Truffle, Tartelette—Tuna—Horseradish, Foie Gras—Oreo—Cherry, and a Carrot Yuzu Cornetto, accompanied by the 2021 Henri Bourgeois Rosé de Pinot Noir “Petit Bourgeois” from Loire Valley, France—a refreshing rosé that charms with its bouquet of ripe red fruits and rose flowers, setting a vibrant tone for the courses to follow.

The dinner progresses through a series of finely tuned appetizers, including Pike Perch—Fennel—Herbs, Endive-Speck-Balsamic, Scallop—Palm Heart—Apple and Red Beet Gazpacho paired with the 2023 Clos Henri Estate Sauvignon Blanc, Marlborough, New Zealand (WE93). Followed with the second appetizer, Seared Foie Gras—Terrine—Truffle Brioche is paired with the 2022 Henri Bourgeois Sancerre Blanc "Les Bonnes Bouches", Loire Valley, France, formerly “Les Baronnes”, a beautiful example of Domaine Henri Bourgeois’s signature Sancerre style. The entrée Rainbow Trout-Pumpkin-Mountain Kombu Beurre Blanc is paired with 2019 Henri Bourgeois Pouilly Fume “La Demoiselle de Bourgeois”, full of complexity of aromas.

The main course, Venison—Brussels Sprout—Black Garlic, is thoughtfully paired with 2021 Clos Henri Estate Pinot Noir from Marlborough, New Zealand, meticulously chosen to enhance the unique flavors and textures of the dish. The evening concludes on a sweet note with a selection of desserts, paired with a carefully selected Iichiko Special, a Honkaku Barley Shochu from Oita, Japan, whose layers of toasted barley, dark chocolate, and a hint of coffee on the finish bring out the flavors of the surprising dessert flavor combinations in Pumpkin—Balsamic, Chocolate “Custoufflé”, Rum & Raisin—Coffee Blossom—Coconut, and White Fungus—Ginger—Sea Buckthorn.

Domaine Henri Bourgeois crafts its wines with passion and precision in Chavignol, the heartland of the Bourgeois family near Sancerre. The estate's devotion to the Sancerre and Pouilly-Fumé terroirs, and its dedication to preserving the natural environment, are reflected in the expressive wines that encapsulate the essence of Sauvignon Blanc and Pinot Noir. The estate's focus on sustainable viticulture practices ensures that the remarkable biodiversity of their vineyards continues to thrive, providing a foundation for wines that convey expressions of their unique terroir.

Rhaeto-Romanic for «nest», his currently three IGNIV restaurants are places for the senses where sharing culinary art, indulgence and time take center stage – a refreshing and young concept with outstanding cuisine focusing on the product. In addition to the exquisite interior design, the IGNIV logo, designed by graphic designer Remo Caminada, also adds a touch of understated refinement. He used the simplest of design elements to create the logo: an oval and straight lines. At first glance it appears to be merely a muddle of lines and only becomes clear when one looks closely: It symbolizes an egg in a bird’s nest. The gastronomic concept not only pleases its guests: Guide Michelin currently awards two IGNIV restaurants in Switzerland – at Grand Resort Bad Ragaz, at Marktgasse Hotel Zürich, both with 2 Michelin stars and opening 4th quarter 2024 IGNIV Andermatt.
