Bangkok, Thailand – August 27, 2024 – The St. Regis Bangkok reintroduces VIU as the hotel’s signature ristorante, serving exquisite Mediterranean cuisine, drawn from Italian, Spanish, and French culinary traditions. The gastronomic transformation will also influence the service style and the restaurant ambiance, starting from September 10, 2024 onwards.

Not only does this modification add warm soul to the restaurant through its high-quality, yet affordably indulgent offerings, but also provide a complete change of service style to be more engaging, relaxed yet professional and give an inviting welcome to satisfy gourmands for all occasions, regardless of casual catchups or business discussions.

Led by Executive Sous Chef Matteo Fontana & His Team:

Overseeing VIU’s culinary endeavors is Executive Sous Chef Matteo Fontana, a seasoned Italian chef with a rich background in some of the world's most esteemed MICHELIN-starred kitchens in Italy and other acclaimed establishments in Abu Dhabi, New Delhi, and Ho Chi Minh city. His assistant, Chef de Cuisine Pongsakorn Boonruang, excels in handcrafted culinary creations presenting the intricate balance of flavors and presentation.

The Culinary Offerings:

The restaurant’s chefs honor the rhythm of nature by following the European seasonal cycles for imported ingredients and sourcing locally for the freshest produce. Following the culinary traditions of Mediterranean Sea, the lunch and dinner menu begins with a selection of antipasti, salads, and starters such as Octopus Salad "alla Mediterranea", fresh Burrata & Tomato Salad, Pan-seared Rougie Foie Gras Escalope, and Black Angus Beef Carpaccio.

Delight in freshly made pasta and risotto dishes and experience Matteo’s most favorite pasta, Ravioli. Try his signature Homemade Braised Duck Leg Ravioli – the Best Braised Duck Leg Ravioli in Bangkok – made with a classic recipe from his grandmother who always cooked on Sundays. He redefines her secret recipe with a modern cooking technique that slowly braises the duck at a low temperature for two hours to create the perfect balance of moist duck meat, as well as combine it with ravioli for a unique twist. Continue with the comforting Handmade Pappardelle with Lamb Ragout, presenting the recipe from Northern Italy where hearty stews and braised dishes are perfect for the cold weather

Diners can also experience the live artistry of pizza-making firsthand, watching as chefs knead, toss, and craft homemade classic Italian style pizzas to order, each exuding authentic flavors with its perfectly charred crust.

Main dishes include classics such as the layered deep-fried Eggplant Parmigiana, the classic Italian dish which Southern Italians often enjoy during family gatherings on Sundays. Filetto di Manzo “alla Rossini”, Matteo’s most favorite traditional Italian menu, offers the exquisite contrast of the texture between the jelly-like foie gras and the firm beef, alongside Pan-Seared Local Seabass Puttanesca Style, a perfect combination between local ingredients and a traditional Italian Puttanesca sauce - all inspired by the culinary traditions and high-quality seafood akin to those found in Mediterranean cuisine.

A Transformation of the Service Style: 

The service style is influenced by the Mediterranean Sea where lively and inviting surroundings are essential. Guests will experience a personalized dining experience with the engaging service style among animated environment through chefs in action at the pizza counter and enjoyable music. Our service team serves dishes—whether from the à la carte menu or during the buffet presentations—directly to the table, offering insights into the inspiration behind each creation and suggesting wine pairings or curated beverage selection to enhance the meal.

Located on the 12th floor overlooking the golfing greens of the Royal Bangkok Sports Club, VIU Ristorante offers all-day dining, including daily à la carte lunch and dinner menus. On the weekends, the restaurant continues to host EPIC dinner buffets on Fridays and Saturday evenings from THB 2,500++ per person, and the Exquisite Sunday Brunch every Sunday from THB 3,200++ per person.
