The first Southeast Asian venture by Chef Paulo Airaudo, who has earned six Michelin stars across his restaurants worldwide, Sartoria by Paulo Airaudo continues to delight discerning local diners and international visitors alike. With interiors that reflect the tailoring traditions of Florence and sweeping views of Bangkok’s sparkling skyline, the restaurant promises truly immersive fine dining experiences.

Sartoria by Paulo Airaudo’s new summer shine a spotlight on seasonal ingredients. Each journey begins with a delicate Consommé infused with leek and spring onion, followed by a series of snacks — including a new creation featuring Camarón Rojo from Spain, melon, kaffir lime, and verbena, an aromatic element that evokes the freshness of summer.
Guests will savor a modern interpretation of the Italian classic Minestrone with turbot, seasonal vegetables, and chicken consommé, and indulge in Bottoni, delicate button-shaped pasta complemented with uni from Japan, taleggio, and vin jaune – a creamy, umami-rich sauce that blends the essence of land and sea.

Highlighting the season’s depth and sophistication, Kinmedai—a prized deep-sea fish from Japan—is elegantly paired with foie gras, fresh peas, and a delicate Champagne sauce, achieving a harmonious balance of richness and finesse. Meanwhile, Pigeon is presented with cherry, hazelnut, cauliflower, and a vibrant jus, offering a bold and layered expression of summer’s depth and complexity.
To conclude the experience on a refreshing note, guests are treated to a tropical Piña Colada dessert — an elegant composition of pineapple, coconut, and coriander — offering a light yet vibrant finish that perfectly echoes the spirit of summer.
